Category Field on an Activity (7.01)

Hi, I am trying to set a default category on an activity - based on the current user. Seems easy enough, but I cant' figure out how to modify the appropriate plugins, or if it's possible. When I schedule a new Phone Call, for example - do I have the ability to see the form/script behind that? If so, can someone tell me what it's called?
