What problems can arise from releasing updates to and brand new forms/scripts during the day?

You don't want to do this. Since about v6.x this functionality broke. You used to be able to get away with this (the client would continue to operate on cached data/forms/scripts). However, now - if you release a new view - the client will error. A ctrl-F5 obviously clears it up - but you will get errors and your users will call you !

Forms/scripts are cached on the client and in order for them to see the changes, the user MUST issue a ctrl-f5.

Remotes are no problem since changes synch'd over always aske teh user to refresh.

LAN users could step into a "hole".. that is.. if something is navbar/toolbar/menu launched (or an add/edit form) then they will see a SalesLogix error popup. Ctrl-f5 usually handles that problem.

I feared as much.

Got people using it on all sides of the globe (no remote offices as yet, all network clients over a VPN), so I end up bundling everything up and applying them over the weekend

Thank god for bundles I guess.
