I was wondering if it would be possible to create this functionality for a new entity to store emails against the new entity

found it...you can use the OnMessageDrop event on the custom mainform and use the message object to get the values.

I'm investigating the Outlook2CRM software from Ryan for having buttons in Outlook but looks like the way to go.
