Is there anything available describing how to modify the sales dashboards? How do you create new dashboard forms?

Dashboards aren't any different than other forms. A nice way to work them is with HTML on an embedded browser. I think the opportunities detail view is a good example. How do you modify them? Just open them in the arquitect and dive into the code, it's mostly in the script. How to create new ones? Just create new forms and a way to launch them (toolbar, navbar, menus, buttons in other forms, a main view, etc.).

Also you can try using charts or nicer controls with a .NET extension. The sample code posted by Ryan is pretty straightforward.
