Default Picklist Value and Textbox text for new ticket

When a user creates a new ticket the "Area" picklist defaults to the first (blank) value. 90% of our tickets are going to be "Service" for the area. How can I get the new ticket form to display "Service" as a default? Along with that I need to "turn on" the disabled "Category" Picklist and populate it's value with "Warrenty". How do I go about this? One last thing is that I need to default the "Subject" text box to "A new warrenty ticket has been opened." I thought it would be easy but once again I'm lost.
