You can't. The current web datagrid does not support any kind of inline editing. You'll add the field to the grid as a standard bound column, the add/edit screen is where you'll use the picklist, not in the grid.

If you did want to implement your own inline editable grid, you could use the Add Opportunity Product area as a guide...
