As it stands, 'Everyone' is the owner for all accounts. We are looking to add a team, Team 2, where we can add new accounts with Team 2 as the owner. We would like only Team 2 members to be able to view accounts owned by Team 2. In order to do this, do I need to create a Team, Team 1, and replace the owner of all accounts owned by 'Everyone' with 'Team 1'? My thinking is that we are limited in who we can show/hide accounts with 'Everyone' being the standard owner.

Spot on. This is correct. CReate Team 1 and re-align all owners of existing accounts to Team 1. Then create Team 2 and put the members in. Only people in Team 1 and 2 (either directly or through inheritance) will see all accounts.
"Everyone" should be avoided at all costs - as you lose any form of security on it.
